Update and a really simple recipe (Yes, Amanda cooks! :P)

So the surgery took place today.. It was over before I knew it; I even had time to come home and make a nice mean :)

So before I get to the cooking I want to let you all know that the surgery seems to have come out a success. As of right now, to our knowledge, grandpa still hasn't woken up since the surgery, but the doctors have assured us he would be fine. At least with the hernia anyway. Now all thats left to worry about is this chest Xray and then.. we'll be home free!!

So the surgery didn't take very long, and there wasn't much we could do since grandpa wasn't waking up anytime soon. So grandma decided we should just come home. So about 4:00 we got home. We had no plans for supper, and seeing as the surgery was a success I was in a pretty happy mood.

I know what your all thinking.. "Whoa Whoa! Amanda cooks? I've never seen her do a cooking or recipe post before!" I know, I should post them a little more, but to be honest I only cook when the mood strikes me.

Today, it struck me. And Voila! I wanted to make a stir fry, but I am very very picky when it comes to the sauce. So I bought a packet of sauce and only applied it to half of my tofu fry. The other half I just made regular cooked Veggies and tofu! (My Favorite!!)

It actually turned out to be a wonderful dinner. I made sooo much and when I was done I was stuffed! I had the feeling, and I was right, the Stir Fry mix was a no go. I just didn't like it, it was way to tart (You can see pictures of the brand along with the other pictures)

Oh and here are some pictures that just make me happy. Aaron and Necco both enjoyed the Stir Fry Tofu and I got some pictures of them eating it :D!


It's really simple to make!
I'll explain

Ok,
So what I had:
Tofu and Veggies/Tofu and Veggies with Stir Fry Mix
and Pineapple Rings along with Candie Yams.

To make the regular Tofu and Veggies:

Turn the stove top on (I had mine on the 5 the entire time) rather then vegetable/cooking oil I used Olive Oil. Let the oil get hot and then drop in your choice of veggies and the tofu (If you don't like tofu then you can substitute it for chicken) I had my Tofu and Veggies Simmering for about 20-30 minutes. It really depends on how you like your tofu but I love mine more tough so I kept it in for a while. Then take it out and eat! If you want to add the stir fry mix then you just do the same but follow the instructions on the packet. Honestly, I would not recommend the mix though.

What you'll need:
Mixture of Veggies (I recommend Snow Peas, Broccoli, Carrots and Onions; But you can use any assortment of vegetables)
1 tub of Extra Firm Tofu (Or, like I said, if you like it softer then you can buy the not so firm kind)
and thats it!
Unless of course if you want it with the mix then you'll need a packet of stir fry mix which is available in the oriental section of your grocery store.

The plate I used in the pictures for presentation is called a Swirl plate. It's supposed to be used as a Spaghetti plate, but opportunity called and it worked great for my pictures! :)
